Cooking walleye is a skill that takes a bit to master. I’ve seen skilled fishermen find and catch their limit of fish - and take amazing walleye pictures on the lake.
Many anglers have some basic skill at cleaning walleye so the meat has no bones, but often, the last step, the walleye recipies - leaves some room for creativity and flair.
Traditional walleye cooking is simple and delicious - even if you only have a pan of butter and some salt and peper. The most popular Canadian shore lunch recipes include some amazing batters. Just dip the walleye fillete in the batter powder, then lay it in the buttered frying pan.

The traditional Shore Lunch recipe for cooking walleye over an open campfire was very simple - and to my mind, it’s still the best.
You travel light while in a canoe. So you only have one frying pan, the best choice being a 10-12 inch cast iron deep dish frying pan. Once you find a place to set up your tent for the evening, plan where you will set up, then light your cooking fire. Set up your camp site while tending the fire occasionally. Then head down to the lake and grab your stringer walleye, and clean today’s catch - placing the fresh fillet’s into a bowl of clean water.
By this time the fire has burned down to some nice coals and you can break out the campfire cooking gear; a grate for above the fire and your frying pan.
The most basic walleye recipie is 1/4 pound of butter in the pan with salt and pepper - toss in the walleye and cook till golden brown. Delicious.
Often, the old-time trappers - who were often the first Finlanders to clear and settle Northwestern Ontario - would take the trouble to carry a bag of crushed Kellogs Corn Flakes. The fresh walleye fillete were taken from the bowl of water and coated with Corn Flakes and/or flour with salt and pepper before they were cooked in the melted butter. Delicious too!
